Flank Steak
Use a marinade to achieve tenderness. Grill or pan-fry. Slice thin

Ribs
*Note: If making a big batch, I start this before going to bed. If not follow recipe, reducing heat to 325* and braise for 1 ˝ hrs.

In a 525-degree oven, brown ribs for 15 minutes. Add hot apple cider and cover, cooking an additional 20 minutes. Then shut oven off and allow to rest in oven overnight. In the morning, you'll have fall-off-the-bone-delicious ribs. Refrigerate until ready to eat. Reheat on char grill or in the oven brushing with the BBQ sauce of your choice.

Stew Meat
This product is super convenient, as its cut & ready to use. Season and sauté in olive oil till browned; add your favorite broth or sauce of your choice & simmer for 1 hr. This is great for Stew, Stroganoff, or Chili, just to name a few.

Buffalo Strips
These pre-cut strips are great for fajitas, kabobs or grilled steak salad. For fajitas, simmer in stewed tomatoes until tender. Then place on grill to char. For kabobs or steak salad, marinade overnight and quick sauté or grill.

 
Brisket
Once tried, this will become a favorite. The meat is so tender, flavorful and juicy. This makes fabulous BBQ, or shredded for sandwiches & enchiladas.

1.) Place heavy deep roasting pan rubbed with olive oil in 475* hot oven till heated

2.) Rub Brisket with olive oil, salt & pepper, and place in hot roasting pan, sear for three minutes & turn, searing another 3 minutes.

3.) Add chopped onions, garlic and 1 quart natural apple cider. Bring liquid to a boil.

4.) Reduce heat to 325* and cover. Braise for 2 ˝ hrs. or till meat pulls apart easily with fork.

5.) Let rest uncovered pull into pieces or shred using two forks.

*Note: I leave the meat in the juice until ready to serve. If serving as BBQ, add some of the juices to your sauce. The apple cider complements the flavor of the buffalo without overpowering it or changing the taste.

Buffalo Shanks
This is great to use in the traditional recipe for Osso Bucco. The marrow is also coveted as a delicacy by itself or to use in stocks. Shanks can also be used as a substitute for BBQ Ribs.

100% Buffalo Brats
Par boil in beer, (this can be done in advance), remove from beer & coat with olive oil. Grill over medium high to high gas heat for 5 minutes.

100% Buffalo Hot Dogs
Great taste and the kids will love them too. Grill over medium high heat.
