Ingredients
2 – pounds Wild Idea Premium Ground Buffalo
2 – tablespoons olive oil
1/2 – teaspoon mustard
1 – teaspoon ketchup
1/2 – teaspoon thyme
2 – teaspoon salt & pepper
Directions
Mix all ingredients together, excluding the Ground Buffalo.
Add Ground Buffalo & mix thoroughly with hands. Pat into 6 patties.
Place in refrigerator to firm up burgers.
Grill over high heat for 3 minutes each side for medium rare. (Dan & I like to drizzle a little more olive oil over and sear for another half minute per each side for medium. This gives the burgers a bit of a crust on the outside).
Remove from the grill, and sprinkle with a high-quality finishing salt. Allow to rest for a couple of minutes before serving.

Made this last night with baked sweet potato fries with a homemade chipotle sauce, what a treat!

These were delicious! The only change I made was to fry in a cast iron skillet with a bit of olive oil – 3 minutes per side. (It was 5 degrees outside……) We follow Tim’s family tradition of topping burgers with some chopped green olives mixed with a bit of mayonnaise, along with raw onion, ketchup & mustard.

In my opinion, Baked Fries!
