Bison, Beets & Boursin

This is a non-recipe recipe… mostly, because I’m a lover of the main three ingredients, and I didn’t have any time! It’s earthy, bright and delicious.
Ingredients: (per serving)
- 1 - 5 oz. Top Sirloin Bison Steak
- ½ – beet, roasted, peeled, diced
- Olive oil
- Salt
- Pepper
- Boursin Cheese
- Honey
- Crunchy bread crumbs
- Fresh Rosemary, minced
- Squeeze of fresh lemon
Preparation:
1) Rinse the steak, then pat dry, rub with olive oil and season with salt & pepper. Char grill over high heat, for 1.5 minutes each side, followed by 30 seconds on each side. Remove from heat and allow to rest for five minutes.
2) While the steak is resting, over medium high heat, add a splash of olive oil to a sauté pan, followed by the diced beets and season with salt and pepper. Sauté for 5 minutes.
3) Lightly warm a dollop of Boursin cheese in the microwave and stir in a squeeze of honey. Stir to incorporate.
4) To plate, place the Boursin on the plate and give it a smear with the back of a spoon. Add the sauteed beets, top with the steak, and sprinkle with croutons (adds texture) and minced rosemary. Squeeze a fresh lemon wedge over all.
