Bison and Zucchini Meatballs

This is a delicious and easy way to use up your summer bounty of zucchini. Meatballs are versatile and fairly easy to change up the proportions of the ingredients while still turning out quite tasty. Our family loves this recipe and it's a great one for kids who enjoy cooking to help with!

Ingredients

  • 1 lb Wild Idea Ground Buffalo
  • 1 small to medium zucchini - grated
  • 1 tbsp Italian Seasoning
  • ⅓ cup bread crumbs or almond flour
  • ⅓ cup grated parmesan cheese
  • 1 egg
  • Salt, Pepper, Red Pepper to taste
  • Tomato Sauce

Directions

  1. Mix all ingredients together, being careful not to over mix.
  2. Form into meatballs. We made ours a little larger to save on prep time.
  3. Add a thin layer of tomato sauce to your cooking pan and place meatballs on top of sauce.
  4. Bake at 350 until cooked through. 20-35 minutes depending on size.
  5. Serve over your favorite pasta or with mashed potatoes.
