Comfort food gets a whole lot better when using Wild Idea's 100% grass fed bison meat! This recipe is a family favorite, but it’s also worthy of company. And, other then the braising time, it comes together in a jiff. Another one for the recipe box.
Ingredients: (serves 4)
- 1 - pound Wild Idea Stew Meat
- 2 – tablespoons butter
- 1 – small to medium onion, diced
- 8 – cremini mushrooms, destemmed and sliced
- 4 – garlic cloves, finely diced
- 2 – teaspoons salt
- 2 – teaspoons black pepper
- 1 – teaspoon dried thyme leaves
- 1 – cup white wine, dry sherry, or red wine
- 2 – cups buffalo broth, or organic beef broth
- 1 – tablespoon Worcestershire
- 2 – teaspoons Dijon mustard
- 1 – cup sour cream, room temperature
- ½ - lemon, juiced
- ½ - cup fresh parsley, chopped + more for garnish
- Egg Noodles or Pappardelle, cooked per instructions *I reserve a little pasta water and add a good dallop of butter and toss with the noodles before plating.
Preparation:
- Rinse the buffalo stew meat in a colander, and pat dry with a paper towel.
- In a heavy stock pot over medium high heat, heat the pot, add the butter and then the stew meat, increasing the heat to high. Give the meat a quick stir to coat with the butter, and allow the meat to lightly brown, stirring occasionally.
- Add the onions and stir in to incorporate. Continue cooking until the meat is browned and onions slightly tender.
- Add in the mushrooms, garlic, salt, pepper & thyme, and stir to incorporate. Continue to cook for about 4 minutes.
- Deglaze the pan with wine or sherry, scraping up the bits from the bottom of the pan.
- Add the broth, Worcestershire and Dijon and stir to incorporate. Reduce the heat to low, cover and simmer for 25 minutes, or until the stew meat is tender.
- Fold in the sour cream and bring to a simmer. Add the lemon juice and parsley and stir to incorporate.
- Serve immediately over buttered noodles.
This recipe can be made ahead of time up to step 6, then reheated and finished for convivence for a quick family meal or when entertaining.
