Bison Chorizo & Potatoes

Chorizo & Potatoes is a traditional Mexican dish (Papas con Chorizo) that is super easy to make, and so delicious! And, our 100% grass-fed Buffalo Chorizo makes it even more so. Great for brunch, lunch or dinner. Another one for the recipe box!
Ingredients
- 2 – tablespoons olive oil

1 – pound Wild Idea Buffalo Chorizo
- ½ - onion, thinly sliced
- 2 – tablespoons butter
- 1.5 – pounds organic, baby golden potatoes, par-cooked and quartered
- 2 – teaspoons salt
- 1 – teaspoon paprika
- Optional: ½ - jalapeno, diced
- Fresh cilantro or green onions
Directions
In a heavy skillet, over medium high heat, heat the oil and crumble in the bison chorizo. Sauté the chorizo until lightly browned, but do not overcook.
Remove the chorizo from the pan with a slotted spoon and transfer to a bowl. Cover loosely.
Add the onion to the pan and sauté for a few minutes.
Add the butter to the pan, melt, and then add the potatoes, salt and paprika. Toss the potatoes to distribute the seasoning and allow them to brown slightly before tossing again. Repeat lightly browning the potatoes after second toss.
Return the chorizo back to the pan and fold in to incorporate. Heat until the chorizo is hot, about 3 minutes.
Remove the skillet from the heat. Garnish with fresh herbs and serve immediately.
Recipe Note
As a substitute, you could also use our ground bison, and spice it up to your liking!
