A delicious, super-healthy, and highly nutritious meal for one or two!
Ingredients

1/3 - Pound Wild Idea Buffalo Ancestral Blend
- 1 - Tablespoon organic olive oil
- 2 - Tablespoons organic grass-fed/finished butter
-
2 - Cups chopped vegetables
-
2/3 - Cup organic coconut milk
-
rice noodles, prepared as directed
-
Salt (to taste)
-
Cilantro (flavor & garnish)
Directions
Heat the oil & butter in a sauté over medium high heat.
Crumble in the meat and brown for 1 minute.
Add the Thai Curry and stir to incorporate.
Add the vegetables and sauté, about 3 minutes.
Add the coconut milk and bring to a simmer.
Place prepared noodles in a bowl and spoon the curry over the top. Sprinkle with fresh cilantro.
Recipe Note
