Ingredients

  • 1/3 - Pound Wild Idea Buffalo Ancestral Blend
  • 1 - Tablespoon organic olive oil
  • 2 - Tablespoons organic grass-fed/finished butter
  • 2 - Cups chopped vegetables
  • 2/3 - Cup organic coconut milk
  • rice noodles, prepared as directed
  • 1 - Mike’s Organic Green Thai Curry
  • Salt (to taste)
  • Cilantro (flavor & garnish)

Directions

  1. Heat the oil & butter in a sauté over medium high heat.
  2. Crumble in the meat and brown for 1 minute.
  3. Add the Thai Curry and stir to incorporate.
  4. Add the vegetables and sauté, about 3 minutes.
  5. Add the coconut milk and bring to a simmer.
  6. Place prepared noodles in a bowl and spoon the curry over the top. Sprinkle with fresh cilantro.

  • Just a note that I was looking at this recipe online and unintentionally clicked on the rating stars, giving it a 3-star rating (morning of January 23). I did not mean to rate it at all—haven’t tried the recipe yet! So I hope you’ll delete that mistaken rating.
